Yields 10 guests

To make the Clementine Cordial (makes 750ml)

300ml recently pressed clementine juice
200ml fresh lemon juice
500g fine sugar

For the Drink (produces 850ml, enough for 10)

400ml good quality vodka
100ml dry gin
150ml peach schnapps
200ml clementine cordial (see above)
Whole cranberries, for garnish
Mandarin essential oil, to finish

Directions

Making the Cordial: Put every items in a pot, heat until it reaches a gentle boil, agitating so the sugar melts. Then, remove from the heat allowing it to cool completely. Transfer to a sealable bottle, close it and refrigerate it chilled, it will last for around one month.

For the Cocktail Base: Combine all the liquid ingredients into one sizeable container, leave to sit for one hour, then pass it through preferably using a fine cloth, so it's perfectly clear.

To serve: Add 85ml from the cocktail base into your cocktail shaker containing ice, gently stirring lightly for one minute to cool it down. Filter into a chilled martini glass or a similar vessel, top with a few cranberries and complete it with a light spray of mandarin oil above the glass.
